Immunity to damage is only really possible while shielding. Otherwise, as far as I know, the best you can hope for is maybe that attacks do like 40% less damage with heavy armor. So you'll probably want to mainly focus on HP and stamina (for the greatshield).Pyromancer is also better for dark builds, i.e. using an Int/Faith stat spread but only for wielding dark/chaos-infused weapons.
