EECS 388 does a pretty good job in covering a wide range of things, but you’re correct that the administration of the class is trash. From people I’ve heard who’ve taken both, 475 and 376 are roughly similar in style and load.

Other top schools have open sites similar to eecs388.org that are decent sources. But my best suggestion is to just become a good Googler. The great thing about CS topics in general is that pretty much everything is documented and searchable, there’s really no need for physical textbooks on computing topics anymore with the internet.
