He used malted rye, which should have the enzymes, but I would assume that 700 gms for 6.3 kgs of corn is a little low to get much action. I use 13.5 lbs flaked corn, 6.75 lbs flaked rye, 4 lbs 2 row brewers malt (malted barley) So basically 1/5 of the amount of other grains, and that fermented out in a matter of a couple days.
